Sometimes the most beautiful things happen unexpectedly.
I thought I was calling a different restaurant but accidentally dialed Central in Lima, Peru, the best restaurant in the world, again. And suddenly, a table became available. As if it was meant to be.

The Altitude Menu
I chose the Altitude Menu: an 11-course journey where each dish told the story of a specific altitude in Peru, from the deep sea to over 5000 meters.

  • Every course was made from pure, local ingredients.
  • Lovingly prepared, with deep respect for the centuries-old traditions of the indigenous people.
  • Did you know that Peru has more than 800 varieties of potatoes? The potato on my plate, harvested at 4200 meters, was cooked and served in clay.

One of the most extraordinary dishes? Pacu, a predatory fish from the Amazon that also feeds on watermelon that falls into the river. A carpaccio of this fish, topped with a thin layer of frozen watermelon and coca leaves, was a true explosion of flavor. Everything was paired with a non-alcoholic selection of refined, one-of-a-kind drinks.

From my table, I had a clear view of the open kitchen, where chef Virgilio Martínez and his team worked in perfect harmony, like a symphony. Every movement, every detail was precisely orchestrated. It was more than just food: it was a full sensory experience. I felt spoiled and deeply grateful. These are the moments that color our lives, that we treasure, and pass on as stories.

From Flavor to Silence
Two weeks later, I found myself in a completely different place: deep in the Amazon jungle, on a three-week silent retreat at Psychonauta. Alone, in a simple hut, surrounded by dense rainforest.

Twice a day, simple food was brought to me: a bowl of boiled vegetables, with no salt or spices. Inez, the woman who brought it, didn’t say a word. But her smile, her glance, her hand gestures, they were pure connection. Occasionally, she would surprise me with something extra: a boiled egg. That felt like a feast.

Those weeks in the jungle went beyond the sensory experience. It was a complete merging with nature. No separation between me and the forest, between me and life. I simply was. Fully present. That was the purest experience of “living fully.”

The Work I Do
